This is the third strike for HP as far as I'm concerned: after Snow Leopard was introduced, they initially would not support this and other older printers (and this one isn't that old), even "suggesting" that their customers should buy new printers. Did you install the software from the printer CD or have you recently upgraded to Snow Leopard?If so, uninstall the hp software with the special 'scrubber' key sequence:Go to Applications/Hewlett Packard/ click on HP UninstallerClick on ContinueHighlight your device on the left paneHold the Ctrl, Opt and Cmd keys and click on UninstallThere will be a pop up that asks if you are sure you want to uninstall ALL hp software. (At this point, if you continue, any HP printers you have installed will need to be reinstalled)Click Continue and let it finishNow, run a Software Update.Next, remove and re-install the printer in System Preferences, Print & Fax.You do not need the software now since Snow Leopard has both print & scan drivers built-in. I do not have it hooked up to a fax line so I do not know if that function is working or not but I usually upload scans and email them out. On my system that resulted in the printers being not-findable at all when I attempted to reinstall. I changed the Mode from Grayscale to Color and all was well. I know this is off topic but couldn't help it when I saw the images he posted. Plus, once the disk images are mounted, the disk names bear no relation to the original download titles. Failed To Initialize Selected Scanner Happiness.

It is also possible that my Lion installation was faulty from the start. Sometimes the scanner works; other times, the mac can't even recognize the scanner. I pressed the button and… nothing. Connect with a cat 5 cable and reboot everything that connects you to the internet before you waste time doing a re-install. Take care. In the System Preferences Print/Scan pane, add (using +) a device.
This allowed the printer to be reinstalled... I later discovered that this item works out of the gate—presumably because its default is to open scans in an application rather than saving them to the problematic Documents folder. I have done exactly what you have suggested in this post, and also (previously), all the things that Double-U-Dee suggested in other posts on the "Mac printing and scanning" board, and nothing seems to get Snow Leopard talking to this 3210 scanner. Fixing the problem with these choices required that I edit each of the tasks.
On a hunch, I went back into Systems Preferences and tried reinstalling my printers.
